Banoffee Cupcakes

I really have to change something in the recipe i find. For this one, as usually, I would really advice to reduce the amount of sugar. In the cake and the topping.

I’m sorry but almost 1 kg sugar for that recipe is too much for me.

So i totally changed the topping.


Cream 120g of butter with 180g of brown sugar in the robot. Add 2 eggs. Add 250g flour plus 2 tsp baking powder and 1 tsp baking soda. Mix. Add 4 mashed bananas. Mix. Cooked in the oven 180° for 20 minutes.

Topping: I made a caramel heating 175g of sugar. I added 45g of butter and 70g of cream cheese. I let that in the fridge for a few hours and I covered the cupcakes. These adjustment of the recipe (from The primerose bakery book) give you another version, less sweet of banoffee cupcakes.
