I was totally intrigued by Kim’s recipe of coconut rice. I had to try it. And I loved it! I just added a shallot that I cooked in olive oil and I cooked rice on pilaf method.
As I just can’t live without veggies, I thought that the perfect match would be brocolis with a delicious sauce based on peanut butter. I served this with smoked salmon. It was ok but I really think it could be great with my japonese style salmon (fresh salmon). Believe me. You have to try that combination of flavor.
When I write healthy soba noodle, I mean not fried. They are cooked in the lightest way and still really good.
Have a look at that, it’s just 10minutes preparation.
I made some research and several trials before getting the perfect way to cook soba noodle. Most of the time, they were all stick together and overcooked.
First, make a marinade for the chicken. Dice the meat. I used my favorite marinade: 3 tsp soya sauce, 2 tsp sesame oil, garlic, (ginger if you like it).
Put the veggies in a non-stick pan with a little olive oil on medium heat. Here I used frozen peas, green beans, 1 oignon, half red pepper cut.
Once they are almost cooked (the idea is to let them crunchy), add the chicken.
Put a pan with water to boil. DON’T follow the instructions on the noodle’s bag. They would be crazy overcooked noodles! Once the water is boiling, put the noodles in it. Mix gently with a fork. When the water is boiling again add a glass of cold water. Wait until it boils again and stop the heat. Remove immediatly the water and rince quickly the noodles with cold water. And now put them in the non-stick pan to mix gently with veggies and chicken. You don’t have to fry them. They were really good. That way of cooking is perfect, I was so happy it finally worked.
You could use salmon or beef or only veggies for a meatless meal. Enjoy!
Today i offer you this curry chicken recipe. It’s very light and you can adjust the amount of spice as you like. I used just a little spice because of the kids.
You could add cashew nuts or other vegetables. The kids ate that meal without negociating as usually they do. I think coconut milk is just magic! Ok i’ll admit that i didn’t give zucchinis to the gingerboy! He decided recently to stop eating everything green! Any tip for that?
I love fried wok. I think it’s still healthy because you don’t overcook vegetables.
The really good taste comes from the marinade. Garlic, lemon, soya sauce. It’s basic.
This is another perfect meal when you hurry. Or if you have guests and you don’t want to spend to much time in the kitchen, you could have everything prepared in advance and just fry veggies and shrimps at the last moment.
I was really inspired by my mate Carolyn and her thaï recipe. I didn’t have all the ingredients so i imagine something a bit different. I like to use the wok when i have friends because it’s very quick to prepare and you can cut all the ingredients in advance.
In a wok: fry garlic and onion in olive oil. I only use olive oil to cook. My mediteranean roots, i feel them!
Add 1 pepper (orange for me) cut in strings
Add 2 carrots cut in strings
Meanwhile put the beef to marinate. I cut the meat in really thin slices.
Marinade: Soy sauce, fish sauce, sesame oil, ginger in powder, cumin in powder.
When the vegetables are well done, add the beef in the wok. Stir constantly.
Serve immediatly with rice.
The success of this recipe is also about the quality of the meat. Choose very good meat. I added some sesame seeds as a topping!
