Healthy Veggie Quiche – A very light and thermomix (or not) recipe

Healthy monday is back. The end of scholo year was a nightmare. So many things to do! But I’m back with my healthy program for you!

It’s summer here! Yeah! We have 37/38 ° C woooooo! So we need here some fresh, light meals. I had some veggies and eggs in the fridge. I didn’t know what to do with them until I thought to change a bit my quiche recipe into a lighter one. More suitable for the weather! As it was so hot, we ate that quiche cool. Just from the fridge. And it wasn’t bad at all!

The crust

I used this same crust pie, as usual!

I make it in the thermomix but it could be made in any food processor or if you are brave, with your hands. I used only plain whole wheat (it’s really tasty, I like that).

Spread the crust into the dish.

Veggies

I put in the thermy 1 small beetroot, 1 small carrot and 1 zucchini. I mixed them for a few seconds on speed 3. Spread the grated veggies on the crust.

The cream

In purpose to lighten my basic quiche recipe, I used only one egg. I added one greek yogurt and 1.5 cup of soya milk (use any vegetal milk that you like). I spiced it up with a bit of mustard (but not too much for the kids) and some feta cheese. Just add whatever you like (herbs, spices, cheese… ). I adapted it to my kids tastes but I love those versatile recipes that we can adjust. Mix the ingredients for a few seconds at speed 4 and pour the cream on the pie.

Bake in ventilated oven for 30 minutes at 180 °C.

    I love quiche! Last week I went to this restaurant and I keep banging my head for not ordering the quiche (my favorite and usual order). I have never tried this recipe but maybe it is time to do it. The one you baked looks delicious.
