Healthy Veggie Quiche – A very light and thermomix (or not) recipe
Healthy monday is back. The end of scholo year was a nightmare. So many things to do! But I’m back with my healthy program for you!
It’s summer here! Yeah! We have 37/38 ° C woooooo! So we need here some fresh, light meals. I had some veggies and eggs in the fridge. I didn’t know what to do with them until I thought to change a bit my quiche recipe into a lighter one. More suitable for the weather! As it was so hot, we ate that quiche cool. Just from the fridge. And it wasn’t bad at all!
I know it’s spring here! But a warm filling soup is always good for rainy evenings!
I suggest today a totally veggie soup but still really filling and full of vegetarian proteins.
There are a lot of Minestrone soup recipes. Each italian family has its own recipe. The idea is to mix vegetables cut in dices, tiny soup pastas, and of course a mix of pulses (I bought mine in a packet at my organic food store: chickpeas, lentils, peas, beans…).
In this so cold winter time, i suggest another soup recipe. Something very easy, thermomixable and really filling. Pumpkins are the best in winter!
Ok you may say, boring another pumpkin recipe soup! Yet, i fancied up by enriching it adding, coral lens, chestnut, and a spoon of oat flakes. I got this tip from my friend Saveursetastuces. Add a spoon or two of oat flakes in soups to enrich them, give them consistency. Here we go?
Put everything in the themy except sesame seeds and soya milk.
min, speed 2, 90°C
Mix at Speed 10 for 15 sec
Add soya milk and that's it!
You could try with another veggie milk, must be also good with rice milk or almond milk. Spice it up as you like. If you don’t have the magical thermomix, don’t worry just mix well all the ingredients after cooking them.
Maybe you didn’t have too much of « galette des rois » but still, it’s good to start the week with a healthy diner.
I know this doesn’t sound fun or yummy. Please try on. You’ll see. And for the ones who want to lose a little christmas-chocolate-weight: perfect!
I learnt that recipe, 2 years ago with my dear friend from SaveursetAstuces. I learnt with her more about nutrition and vegeterian food.
The trick here is to use what you have. I used rice because i didn’t have anymore quinoa. I used leak instead of onions and carrots. I like to mix vegetables and fruits. And not bother too much for complicated meal. This make a really good one for hurry evenings and i’m sure some clever thermomix users could try it in the thermie.
Curcuma is always a healthy win so use it a lot.

What i like very much about that recipe is that my kids loved the quinoa patties and they usually don’t eat quinoa at all. The other thing that i liked so much is that it’s very adaptable and you can flavor them as you want, as you can, following season vegetables.
In the original recipe, they are pesto flavored. Of course as always, i’m missing some ingredients. So i decided to try 2 different flavors: mustard and tomato puree.
Add the egg, bread crushed, shalott, flour, salt and pepper.
Separate in two parts in two bowls.
Add mustard in one of the part and tomato in the other.
With a tbs or your hands make some balls.
Put some flour to keep them to attach too much.
And fried them in olive oil.
You could add spices and herbs of course. I didn’t, because i wanted my children to eat that! And they are that kind of kids you know… picky! It also can be transformed easily in a gluten free recipe using rice flour for exemple.

You could even turn it into a vegan one.
I used carrots and potatoes. No beet-root. The purple color is the color of an ancient variety of carrot: purple carrot! Isnt’it nice? Kids almost thought it was raspberry!
The paste is totally vegan. I made it flat. I added the grated vegetables on it and pour the sauce. It’s really 5 minutes to make and 30 min to bake so a very easy recipe when you have to check homeworks, give bath and all that jazz!
