I was really happy to work with Katia, a very nice lady who asked me to write a post about my gastronomical adventures during my travels.

It was a real pleasure to write this post because it shows exactly how I get inspired in my recipes creation during my international holidays. To discover new countries and new food, nice restaurants… That’s my lovely passion!

So I want to share with you today this recipe for my Healthy Monday series. It was inspirated by Yotam and his fabulous book: « Plenty ».

Vegetables Pancakes
Recipe type: savory pancake
Cuisine: veggie

  • ¾ cup flour
  • 1 tsp baking powder
  • 4 tbsp olive oil
  • Spinach (how much you like)
  • Goat cheese
  • 1 egg
  • ⅔ cup milk
  • salt
  • spice: cumin
  1. Mix all the ingredients in a food processor.
  2. Add finally veggies and cheese.
  3. Let it rest for half an hour.
  4. Cook the pancakes as usual in a pan with olive oil.

I love this recipe because it’s so versatile. You could use leaks or zucchinis. Any kind of cheese will work. And spice it up as you like. You also could add some herbs.
