Veggie and Rice plate

Healthy Monday Time People!

Maybe you didn’t have too much of « galette des rois » but still, it’s good to start the week with a healthy diner.

I know this doesn’t sound fun or yummy. Please try on. You’ll see. And for the ones who want to lose a little christmas-chocolate-weight: perfect!

I learnt that recipe, 2 years ago with my dear friend from SaveursetAstuces. I learnt with her more about nutrition and vegeterian food.

The trick here is to use what you have. I used rice because i didn’t have anymore quinoa. I used leak instead of onions and carrots. I like to mix vegetables and fruits. And not bother too much for complicated meal. This make a really good one for hurry evenings and i’m sure some clever thermomix users could try it in the thermie.

Curcuma is always a healthy win so use it a lot.

Ok now that you are all motivated, let’s do this delicious veggie meal.

  • 1 cup lens
  • 2 cups rice
  • 1 leak sliced
  • 1 grated zucchini
  • 1 apple
  • 10 dried apricots
  • 4,5 cups of water
  • salt
  • pepper
  • spices: curcuma 1tsp
  • herbs from your fridge/garden/market
  1. Put everything (except water) in a pan with a little of olive oil. Heat and stir a bit.
  2. Add water and put to boil with the lid on your pan. When it's boiling, put to minimal heat. Try not to open it all the time. It should be cooked in 15 min.
  3. See how it's easy?

    Tried it tonight but completely different cause i ran out of quinoa and made your galettes with leeks already yesterday…so in the end it was mushrooms, broccoli, turnip, red pepper, garlic, coriander…lens and boulghour…still nice that way of cooking it…does it have to be fried first ?
