Strawberry pie recipe with the perfect crust by Peregrination gourmande.

Well… to be honest, I’ve been too busy eating outside in fancy restaurants (Lisbon, French Riviera, La Baule) to be busy in the kitchen. Sorry not sorry. May was so fast!

While we were in Nice, we tried for the first time la socca, in this very very well known restaurant: Chez Pipo. La socca is kind of a thin fried chickpea patties. It is delicious. This was the culinary discovery of last month. So if you are on French Riviera enjoying the beautiful sun, mediterranean sea, have a try in this restaurant. Ask for la Socca. Enjoy! Blogging Magic happened another time because we found this restaurant thanks to a french food blogger friend : Val, who was so kind and guided us to very good adresses.

This month, I helped my previous bakery teacher in HIS kitchen to prepare the food for his sister wedding. You wouldn’t believe how much food he stocked in 2 giant freezers. I just helped for a few hours and we made some nice desserts. Here is a pic of a white chocolate mousse on blueberry compotée.

May is strawberries season. Strawberryies season means strawberry pie, strawberry sorbet and strawberry jam. Here is for you my recipe for the perfect strawberry pie. Just start making the base for many of my pies with the perfect crust recipe.

Strawberry pie recipe by Peregrination Gourmande

The perfect crust and cream for the perfect crunchy and creamy strawberry pie.
Ingredients
  • Fresh strawberries cut in half
  • One crust
  • Cream:
  • 500ml milk
  • 2 eggs
  • 35g corn stach
  • 50g sugar
  • Vanilla
Instructions
  1. Make my perfect crust recipe
  2. Cream:
  3. Put the milk to boil
  4. Combine the rest of ingredients.
  5. When the milk is boiling, pour the mix into the milk.
  6. Keep mixing on heat for a 2 minutes.
  7. Put the cream to cool.

 

I have an excited annoucement for the next month in my kitchen post!!! We finally changed our 17 years old and second hand Thermomix for the brand new one. It didn’t arrive yet but it seems to be so clever that it cooks for you by itself! Stay tuned for next month post and see what I get from this new assistant in my kitchen!
